Clik here to view.Almost every Portuguese restaurant that you go to in the Algarve will see you being offered what is known as a “covert” this usually includes some fresh bread, olives, butter and some pickled carrots.
These sweet pickled carrots are synonymous with the Algarve and are a great way to start any meal or can be enjoyed as part of a salad or as a side order with fish or meat dishes.
You don’t need to be in a restaurant to enjoy these delicious carrots though as you can recreate them at home easily following this simple recipe.
Remember that the best carrots have been marinated for a few days before serving so think ahead if you are wanting to show off this Portuguese classic to family and friends.
Ingredients
300g of carrots
3 cloves of garlic
1 bunch of fresh parsley
1 spoon of anise
1 spoon of sweet paprika
1dl of vinegar
salt and pepper to taste
Method
First wash and peel the carrots and them boil them in water whole until they are soft.
Once the carrots have then cooled, cut them into slices – making sure that they are not too thin.
Put the chopped carrots into a suitable dish and add to it the peeled and chopped garlic, paprika, vinegar, anise and salt and pepper.
Now leave the carrots to marinate for several days to enhance the flavour before serving.
