Dom Rodrigos – Portuguese Sweet Treats

"dom rodrigos recipe"If you have ever been to a Portuguese cafe or bakery then chances are you will have seen the little multi-coloured foil parcels sitting in the chiller cabinet – these are Dom Rodrigos, sweet treats that are fantastic to eat while enjoying your afternoon coffee.

When you open the foil of the Dom Rodrigos you will be met with a sweet sticky yellow substance that is best eaten with a little spoon unless you want very sticky fingers!

You don’t need to have coloured foil to make these Dom Rodrigos at home but if you can find it then it does make them look wonderful when presented on a plate.

These treats are very sweet and rich (as you will see from the amount of sugar and egg yolks used) but make a wonderful Portuguese treat.

Ingredients 

(makes 6)

  • 250g of fios de ovos (a sweet egg yolk mixture in strands)
  • 50g grated almonds
  • 1/2 litre of water
  • 250g sugar
  • 4 egg yolks
  • cinnamon to taste

Method

Cut six equal sized squares of foil, about 15cm by 15 cm each in size and put to one side.

Put 200g of the sugar into a pan and cover with water.  Place the pan onto the heat and let the syrup mixture come to the boil for two minutes until the sugar forms into droplets when it is dripped from a  spoon.

Remove the sugar syrup from the heat and stir in the almonds and leave until it cools to a luke warm mixture.

When the mixture has cooled sufficiently then add the egg yolks one at a time and mix well.

Put the mixture back on to the heat and stir until it becomes thickened.  At this point add the cinnamon – as much as you like to taste.

Use the remaining sugar and water and make another syrup in a large pan, you will know when the mixture is ready because it will drip of the spoon in ribbons.

Now add the fios do ovo and the almond and egg yolk mixture to the new syrup and blend it together until it is total mixed through.

Allow the mixture to brown in the pan and then put six equal measures of the mixture onto the six foil squares.

Pull the four corners of each square to the centre and twist to finish.
